Cooking lesson: Cat's Salmon with parma ham, and Kyra's tasty salad!

Whilst staying with Kyra we enjoyed having a break from travelling – the constant planning and booking and hostels etc.  Another thing which was great was having a kitchen to use!  Cooking also saved us a bit of money too, because as I have already mentioned Australia is not cheap.

One hot evening we decided to have something simple and light so made salmon and salad.  It was a combined effort, Kyra made a delicious salad and I prepared the salmon and BBQ’d it.



Salmon:

Ingredients

  • Salmon
  • Parma ham/Prosciutto/bacon
  • Leeks or mushrooms
  • Mascarpone or cream cheese or crème fraiche

Method

This is so simple but a really tasty way of preparing salmon in my opinion.  This time we choose to use leeks but you can really use any vegetable you fancy, or cheese or leave it with just the parma ham.  I sautéed the leeks first and added pepper.  Then I laid them on top of the salmon steaks and wrapped them in the prosciutto.  With the remaining leeks I made a simple sauce by melting the cream cheese we had remaining from another meal.  We BBQ’d the fish, but at home I would usually oven cook or grill.


Salad:

Kyra threw together a great little salad using the following ingredients:

  • Tomatoes
  • Basil
  • Olive oil
  • Garlic
  • Salt
  • Red onion
  • Rocket
  • Parmesan
  • Fresh lemon juice
