Cassava is popular in Indonesia and Laos. It is a brown root vegetable which can be cooked in a variety of ways. Known as tapioca in English, a long thin dark brown root which looks something like a shrivelled turnip. In Central and South America this vegetable is known as Yuka. Prepared quite differently in Asia, it is combined with various ingredients and when served can almost seem like cous cous in texture.
